At times I like to post emails in my journal. The emails have < and > characters (usually > to indicate quoted text) and I need to quickly convert those to the ampersand versions of the characters.

This is in my .emacs file and is therefore available via 
ESC x r e p l TAB < TAB

Start with point above the text you want to convert. It will not convert text above point, but everything below will be converted.
